New Brazilian restaurant Maroto to open


The new spot will be connected to the downstairs bar of the same name

Alberto Landgraf’s Bossa may have shut up shop on Vere Street back in February but the site hasn’t been lying totally empty, having hosted occasional dinners and private events. Now it’s being turned back into a standalone restaurant called Maroto. It’ll also be Brazilian-inspired and will have a similar smart, minimalist look, including an open kitchen, to its predecessor but there’ll be a new menu and a new team in place.

Ex-Launceston Place chefs Mehmet Talayhan and Mark Tolentino will be heading up the kitchen, where they’ll be blending local and seasonal ingredients with Brazilian flavours. Key to the Maroto dining experience will be the five sauces to be served with main course dishes like bacalhau poached in butter, Aylesbury duck breast, asador monkfish and roasted cauliflower with capers and raisins. The sauces, designed to hit spicy, sweet, salty, sour and umami flavour profiles, will change seasonally, with the first selection including BBQ maitake with yuzu & soy, parsley sabayon, black truffle emulsion, burnt orange gel and avocado with chilli & coriander.

As well as the mains and sauces, the rest of the menu will feature:

  • grilled tiger prawns with tucupi bisque, prawn mayo and picante mayo
  • 24 hour barriga de porco with tutu de feijão and piccalilli
  • pão de queijo with garlic and 30-month aged parmesan
  • cured seabass with pickled courgette, finger lime and malagueta pimenta
  • feijao carioca guisado (braised pinto beans)
  • mandioca frita (cassava fries) seasoned with vinegar powder
  • grilled pineapple with sage, mint, and coconut
  • lemon cheesecake

The cocktail list will also have a Brazilian slant, with serves such as the Maroto Punch (with cachaça, lime, papaya, passion fruit, coconut & guava) and the Tipsy Triker (with Santiago Cuba, açaí syrup & cherry purée). And if you really wanna push the boat out, there’ll premium champagnes ready to pop too.
